We had rib eyes, caeser salad and mashed potatoes! It was really good! Daughter and I had sparkling cider and hubby had a beer. We'll probably pop open a bottle of champagne towards midnight for hubby and I'll have another glass of the cider bubbly!

Tomorrow we are doing the snack thing while watching the games - spinach dip, velveeta/chili dip, etc. Then for dinner it's pot roast!!!!!!

Happy New Year everyone!

OK, this past weekend I finally made it to the Orangevale Meat Shoppe.
I haven't had a Corned Beef dinner since I was growing up with my parents.
I saw they had it, so I bought it and I'll have it for dinner tonight. We will see what the wife & son think of it. If they don't like it, then they can bake a frozen pizza or something and I'll have lots of leftovers for lunch. I'll have left overs anyway, so I'm also looking forward to making my own Reubens.

Dinner last night was leftover Mac'n'Cheese with a kiddie bowl and spoon, half a slightly moist PB&J, and some popcorn. Dinner of champions!

I've got some boneless chicken breasts. Not sure what to do with them for dinner. I'm out of ideas this week and it's only Tuesday.

What do you usually do with chicken breasts that has you out of ideas?

Chicken cacciatore
Stir fry chicken and veggies
chicken teriyaki over rice
Chicken Cordon Bleu
BBQ chicken
chicken pot pie
grilled chicken and veggies
chicken sandwiches
chicken tacos
homemade chicken vegetable soup
chicken & kidney bean chili
chicken sloppy joes
Chicken & rice bake
chicken alfredo

OK, I'm beginning to run out of ideas now, but I got 2 weeks covered.

Thanks, Bill Z, for all the great ideas. I should have included the info that I'm cooking for very picky and plain eaters. Chicken tacos sound great to me, but hubby prefers beef.
I've already done Cordon Bleu, parmesean, roast, and barbecue over the last two weeks.

I'm thinking a chicken veggie stir fry will do it and they can just pick out the veggies they don't like.
