Had to try Dickey's for lunch today and overall - I will be back!

Their food is really good (pork ribs and beef brisket), good smoke, nice cuts and of course that nice smoke ring. The original sauce was good but thin for my preference (not looking for out of a bottle pour but...). The menu has many options and I found it pretty easy to order (1 meat, 2 meat, rib plate and a quarter plate) but agree the sandwiches could be confusing on first visit.

There are areas for improvement however while there was a wait today, I don't think it took more than 20 mins to get through the line. Once they get into the groove (and it sounds like they have already improved), I bet they will do very well.

Which do you recommend for the first visit: pork ribs or brisket? Are the ribs babyback or spare? Can you get the ribs w/ just a dry rub w/ sauce on the side? Or is it basted while smoked? I'm partial to dry rub w/ dipping sauce on the side.... I always have a hard time choosing between ribs and brisket.... :)

The ribs are dry rubbed and smoked for about 2.5 to 3 hours until they just crack when lifted.We then glaze them very lightly.You can then help yourself to either an original, sweet, or hot and spicy sauce or all three if you would like. The ribs are spare and meaty and tender. I am a diehard ribs fan!

BTW, I like both babyback and spare; but I especially like spare when the little riblets are still on. Oddly enough, I love that crunchy little end. :) To me, it's a little treat on top of the goodness of the proper rib -- kind of like icing on a cake.

LoL. That might be a good idea. But at my age, I no longer have a separate dessert stomach. And I have to finish with pie. A good southern meal isn't complete w/out pie. :)

LoL. That might be a good idea. But at my age, I no longer have a separate dessert stomach. And I have to finish with pie. A good southern meal isn't complete w/out pie. :)


The two-meat plate isn't really double portions of meat. Maybe Ray can tell you the total weight/portion of selecting one meat vs. two. I tried the two-meat plate because I couldn't decide between the ribs and brisket and it included two ribs and a few slices of brisket.

Oh, that sounds reasonable. I assumed something different -- I'm used to ribs coming in only two sizes, half slab and full slab so it's a good clarification. :)

2 ribs and some brisket sounds like a dainty but comprehensive way to start. :) Although, a healthy serving of tasty ribs is never a bad thing :)

Thank you so much! No we are not related to Jim and Renee (at least not that I am aware of) - we came here from the UK ten years ago.
We are trying hard to cope with the enormous demand we have experienced over the past 5 days. I am sure many people understand the logistics of trying to move so many people through the line when they all arrive at once and staff are not only new to the restaurant, but to the food concept and preparation too. I believe that we have got faster over the past few days but there has still been some waiting. Perhaps we should not have chosen Memorial Weekend to open - If you go to BJs or Chili's or Olive Garden you will still have to wait - sometimes 30 to 40 minutes until a table is free. Waiting for a meal at busy weekends is normal. People don't tend to mind that, but standing in line seems less tolerable. If we changed the type of service and sat people at the table and provided waiter service then people would be sitting outside waiting. I am not sure that there is a way to keep everyone happy - perhaps drive thru? :-)

Having owned a restaurant, I learned right away that there is NO way to make everyone happy. Every person has different expectations. We once has a lady complain because we did not re-fill her FREE glass of wine (we would pour people wine as they waited for to-go orders)...
In our first few weeks open, we had someone go on a similar forum and complain that her to go order was not edible, she went on to say that the sauce was obviously from a jar (it was made from scratch) and that the food was terrible. Incidentally, we went on to win an award for the same dish she ordered 6 months later...She blasted us in our first week open. I did respond and apologize for the bad experience and offered her a refund plus a free meal but she had her mind made up-she was not coming back. We tried <_<
Overall, people were great and very welcoming to us...We look forward to trying out Dickey's!!!

What kind of meat would you suggest for someone who has to eat "moist" meat rather than dry? In addition to that I like lean cuts. I'm looking forward to trying our Dickey's soon!

I can tell you from my experience that they do something at Dickey's so that all the meat is moist. Try the brisket! It's lean and you can cut it with a fork, so its not dry. The turkey is also very lean and very moist. The pulled pork is exceptionally moist, but probably has a higher fat content.

check their website for the nutritional information. It's amazing how you can get a great flavorful meal without a lot of fat if you do a little reading.

Don't get me wrong, I compliment him on his responses. I was speaking to your point that everyone expects perfection from everyone but themselves, and pointing out that customers aren't expected to be perfect or close to it. It is the service providers who must perform.



Hey Ray, big crowds are the best type of problem to have. As long as you learn and grow from customer comments, you'll be successful.

No, you'll never be able to please everyone, even if you were a mind reader, 'cause then they'd say you mis-read their mind.

I'll stop by soon to gorge myself silly.

Thanks Steve and really people, I don't understand the "perfectionist personalities of Folsom." I doubt if this can be a reason why all of the small restaurants fail here. Even Goddfellas said his food won awards, yet his business closed. Reality check, take constructive criticism. I can guanrantee the items I mentioned are not just little things and if DICKEY'S is considered more than a fast food joint, I think the peeps of Folsom are not really fans of fine dining experiences. Any restaurant that has refills and free soft serve and giant pickles, is a fast food restaurant IMHO and I can guarantee you that if customers can't get in/out for lunch in twenty minutes they won't go there for lunch. This is why Wendy's ,Subway, KFC, Taco Bell, Pollo Loco, La Bou, Chipotle, In/Out, Mc Donald's etc are all still in business. It's not necessarily the quality, but a combination of consistency, value and convenience. Otherwise, Goodfellas and the like would still be in business. Dickey's has great BBQ, but it must be aware that food isn't the only driver in a successful restaurant.
Americans, don't just come in one color or race.

I would think that adults should be able to figure out timing on their own by now. If you see a huge line and your lunch time is limited, you might want want to go somewhere else that WILL fit within your limited time allotment.

If you only have 20 minutes for lunch, you can't blame that on Dickey's
