Spinach and pear salad from a recipe out of "Cooking Light" magazine. It has shaved parmesean cheese and mustard vinaigrette. The pears at Raley's are really good right now. I got some from Trader Joe's last week which were also excellent.

Today,
left over Tuna Melt from Mary's Goldminer restaurant that I had for lunch yesterday.
But sadly, no leftover potato salad to go with it.

Homemade Quesadillas:
Left over flour tortillas from a potluck at work.
Some harvati cheese and some hot sauce from taco bell & del taco.
Cheap, easy, and is using up cheese from the fridge before it gets moldy.
One minute in the microwave and it's done to perfection.
