Rules of thumb I copied down from a magazine article a couple years ago:


"There is a golden rule, long cherished by restaurateurs, for determining whether a business is viable. Rent should take up no more than 25 percent of your revenue, another 25 percent should go toward payroll, and 35 percent should go toward the product. The remaining 15 percent is what you take home. There's an even more elegant version of that rule: Make your rent in four days to be profitable, a week to break even. If you haven't hit the latter mark in a month, close."

Agreed. I think those of us with tact can agree that moderators should have the right to edit personal information about people. Especially when it can be false and when they are not on the forum to defend themselves.

I think it completely appropriate if Spicy's inappropriate comments about Jennie are edited by a moderator.

A lot of people on this forum have in the past made speculations about a business--whether that business was still running or not. I'm not sure that what Spicy wrote in was necessarily wrong--however insensitive may have been the right word.

However I am more concerned with factual content of Spicy comments regarding business and their owners.
As it comes to money and business practices. That is a privacy issue and I wonder if the information Spicy obtains is morally,ethically or even legally right--in how it is obtained.

After all, only persons in certain positions woould know a locations rent/debts/health (hippa privacy act?).


I think that it would be best to block any other attempts at such posts going on this board-unless verification of legal obtainment can be proved.

I wonder if any of these business owners and their attorney's have seen these posts?

Exactly why I asked you the question. I happen to know that Cuevitas did not close because of Family Illness. Why because my husband was the manager/executive chef and partner with his Mother. They are both quite healthy. The illness in which you are referring to was the death of my Father-In-Law, who passed away during escrow proceedings, so we decided to shut our doors a few days earlier to travel to his funeral.

We had 4 wonderful years at that location, and almost 5 across the street. We didn't close for any of your above expert opinion. The main deciding factor was simple. Our two children, ages 3 and 9 months, who adore their Daddy and wanted to see them beyond the walls of the restaurant.

We poured our heart into our business, and we succeeded for a long long time. My husband recieved several honors including a Best of Sacramento Award, and was reguarly featured on channel 13 with Dewey Hopper. We were not the most popular Folsom Mexican restaurant, but we had an Amazing group of regulars who became more like family, all of whom we still remain in contact.

For you to so brashly put your two cents in without any merit is sad but I refuse to let you tarnish the memory of what my husband (and the others you claim to know about)accomplished.

To the new owners of our old haunts, I wish you well, and I hope that 6608 Folsom-Auburn Rd brings you success, and many fond memories as well. I will always remember Cuevitas fondly, walking in each day greeted by a picture of my adorable son, dressed as a chef, watching him learn to make tamales from his great grandma, flirting with all the girls from Hoshalls next door. I will remember all our family of regulars who made everyday so special, including our annual christmas party where the regulars traded places with staff. It was a good 9 years!

Thank you for your post, FutureMrs4! What a loving tribute and I am sorry for your losses. Both of your father-in-law and of an era for you. Good luck in your future endeavors. May they bring you as much joy and as many fond memories that you have received from Cuevitas!

Thank you for your post. It's unfortunate you had to come defend your restaurant's good name due to one poster's gossip and need to appear an expert. I wish you the best and hope your kidlings are enjoying more time with their dad.

Our kids are doing wonderful, enjoying the time spent with their Father. My son still asks about Daddy's restaurant, and he likes to play chef at home in his play kitchen. Our daughter's first word was Dada. My husband is now home every night for dinner, and gets to spend quality time with us, so obviously we made the right choice.

I will try Folsom Bistro in the future, after some time has passed. The memories are little too fresh right now. I wish them success, the merchants in Folsom Pavillions are a great group of people, many with families, all living their dreams. For those of you who don't frequently shop that side of Folsom, I suggest you take an hour or so to stroll the shopping center. Four Corners does beautiful frame work, and has many unique gifts. Chip and Jill at European Sleep Design have a very innovative product, and I'm sure many busy stressed out "Folsomites" could use a good nights sleep. Coffee Republic has been a Folsom fixture for quite sometime, not your typical drive through Java Joint! I could continue to list all the shops in the Pavillions, but I have a 9 month old on my lap. So fight the traffic (hint, turn left by Mcdonalds, much easier) and give those merchants a chance, most of them are Folsom's own!

Good for YOU for defending Cuevitas.....we always had sooooooooo much fun there. We so very much miss you guys, but we're so happy that you and Daddy are enjoying well spent time with the kids. Thanks again for the incredible 50th B-day party that you helped us orchestrate....our friends still talk about it!!!! Hope to hook up with you guys sometime soon!!!!! Luv ya.... Cruised by there today in attempt at lunch, but apparently they're closed on at least this Sunday.

Checking out the menu by the door I certainly still want to try it. They've got a Kobe burger that sounded intriguing along with many other selections.

Prices were up there, but seemed reasonable for what you get. Looks like the interior is still a work in progress.

Can't wait to give it a shot.

We miss ya too! And all the regulars ! Mario is doing great, and says to say "Buenos Knockers" to Boatman and Whitey! We hope to see you soon, and I will swing by before Ho Ho Ho day with more of my Toffee for ya!
