They look great. If I go with these, should I wait until it cools down a little?

I would wait until it cools down some....maybe September. Planting anything in this hot weather is stressful for the plant although we planted a silver dollar eucalyptus tree two weeks ago.
Even plants that normally don't take much water should be kept watered for awhile after planting them.... If you plant in fall, you should see noticeable growth by spring. Plant them three or four feet apart for a compact hedge. When they are kept topped, they spread.

By the way, whatever plants you decide to go with, I would suggest one gallon plants.
They are cheaper, easier to handle, don't have to dig as big a hole, and they grow fast. We primarily use one gallon plants, and are amazed at how much they grow in a two year period.

When I get a chance I'll post a picture of our beautifully burned and dried out plant. I keep telling the neighbors it's all the rage now, but they're not buying it.
