Hey CV, thanks for sharing that as I just got a crock pot and am looking for good recipes...I did a pot roast on Monday and the meat was so tender we could cut with a fork.MMMMMMMM.

What are chopped brats? I thought you only had one kid. tongue.gif

I'm pretty sure that is short for Bratwurst, but then again, you probably already know that.

He's not a brat...yet. But yeah, when I'm working from home I just toss a bunch of stuff in there that seems like it would go good together. Dinner is ready by the time my wife comes home.

another crockpot recipe:

Place 4 to 6 washed red potatoes in the bottom of the crock.

Rub your favorite seasonings on a whole chicken.

Place chicken on top of potatoes.

Cook on low for 6 to 8 hours.

You can add other veggies to the potatoes if you want (onions & mushrooms come to mind).

I think if I cooked with a crock pot it would only torture the poor lonely dog...

Speaking of the jug salsa from Sams. I dump it in the blender, add 2 bushels of fresh cilantro, 1 tablespoon full of minced garlic, garlic salt/salt and blend well. My friends/family think I make it fresh! I'm not telling them any different either. You can pour salsa over a log of creme cheese, its yummy!

Tuesday night we had Denver Omelets.
Last night we had Greek Chicken Salad, Hummus, and Pita.
Tonight it's Emeril's Sunday Roasted Chicken. I know, it isn't Sunday.

Made Tandoori chicken last night for the first time and was blown away by the fantastic flavors!

Dang I love those spices and the way they taste so good together! (now I wanna go back to Curry Club for dinner soon)

here's the recipe

Ingredients:
  • 2 (6 ounce) containers plain yogurt
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground cloves
  • 2 tablespoons freshly grated ginger
  • 3 cloves garlic, minced
  • 4 teaspoons paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground coriander
  • 16 chicken thighs
  • olive oil spray
Directions:
  1. In a medium bowl, stir together yogurt, salt, pepper, cloves, and ginger. Mix in garlic, paprika, cumin, cinnamon, and coriander. Set aside.
  2. Rinse chicken under cold water, and pat dry with paper towels. Place chicken in a large resealable plastic bag. Pour yogurt mixture over chicken, press air out of bag, and seal. Turn the bag over several times to distribute marinade. Place bag in a bowl, and refrigerate 8 hours, or overnight, turning bag occasionally.
  3. Preheat an outdoor grill for direct medium heat.
  4. Remove chicken from bag, and discard marinade. With paper towels, wipe off excess marinade. Spray chicken pieces with olive oil spray.
  5. Place chicken on the grill, and cook about 2 minutes. Turn, and cook 2 minutes more. Then arrange the chicken to receive indirect heat, and cook approximately 35 to 40 minutes, to an internal temperature of 180 degrees F

Good crock pot item. Cheap too since pork shoulder runs $1-1.30 at the warehouse stores, but make sure you get a small enough one to fit in your crock pot.

Slice about 1.5-2" of onions into the bottom of the crock pot. Trim the pork shoulder of excess surface fat and put on top of onions. Mix a small (8-12oz) jar of apple jelly, 4 tablespoons of whole grain mustard, and a half cup of water and pour over the top. Run on high for a couple of hours, and then switch the pot to low and cook until the shoulder is tender, about 5-6 hours.

The mustard turns sweet/savory after the long cooking, so its not particularly spicy. Tastes somewhere between pot roast and carnitas. I served it in a pot roast style with mashed potatoes and honey glazed carrots one day and in tortillas with salsa, sour cream and the usual taco accompaniments the next day.

The dogs helped out extensively with the leftovers. And yes, the crock pot causes them some consternation as its hard to stand next to it with your nose pointed at it for 8 hours.

Steamed rice, veggies and gyoza. Maybe. If my girlfriend who is coming by for lunch decides to go OUT instead of eat in, then we'll have the salad that I prepped so that the veggies don't go bad.
THANK YOU FOR SUPPORTING MY GIRL.
We could not be doing this without you.
Much love and gratitude.
