Can I vote if I don't make it to any official taste testing visits?

Mylo can confirm I was at Manderes last Friday.

My rating on their burger is, overall, very tasty.
Patty, thick and juicy, gets a 10
Cheese, the Jalapeno Jack was good, but with no swiss as an option (my favorite burger cheese), I give them a 7.
Condiments, fresh & on the side for my placement preferences, but not having sauteed mushrooms and/or sauteed onions listed as an option, I'll give them an 8.
Bun, not a regular type bun, I guess it was more like ciabatta roll. Not that it tasted bad, but the bun added a lot to the overall heaviness of the burger. I prefer a lighter bun like the traditional white bread bun, for me, the bun is more about something to hold onto and keep the condiments more or less off my fingers. I'll give the bun a 5.

I guess that averages out to 7.5 for me.

BTW...it is still just mind boggeling to me that big dip is open? wacko.gif i ate there a lot in high school, but my standards were a little different then.

So, Folsom Bistro Kobe Burger lunch special. Includes fries, soda, and a couple of gherkins. $12.88 after tax and before tip.

Burger was good. Beef was great. Pretty harshly seared on the outside. A little rarer inside than I expected when I said "medium", and bled more than davburr's or mylo's. This might be cause I arrived and ordered last and late. Bread was ciabatta-ish, firm and tasty and sucked up the juices well. Toppings were swiss cheese and grilled onion and mayo, with lettuce and tomato on the side. These last were quite fresh.

Fries were skinny style. Had that break-apart aspect you expect when they are fresh and not frozen. Also had a sort of taste of potato peel throughout. Made me think of In-n-Out fries actually, but crunchier.

I didn't look at drink selection, just got a diet Coke.

Service was attentive but nothing stood out.

As for ambience, this place is kind of schizo. They have silverware and white tablecloths and serve drinks in big wine glasses and have a nice little bar in the back. But it's in a food court area, so it still has that industrial big-window aspect of say a Chipotle. The kitchen is closed off which takes a big chunk out of the room, closes off the sight lines and makes the place feel small. On the way out, we were accosted by a bum who wanted Mylo's leftovers.

I didn't get the Official Scorecard Form so here goes. Out of a notional 5-step scale of "Bad, Okay, Good, Very Good, Excellent"

Meat: Excellent
Cooked: Good
Bread: Very Good
Toppings: Excellent
Fries: Good
Pickle: Okay
Service: Good
Ambience: Good

Overall: Very Good

I concur, it was very good - but I don't think it's the best (I've had better) - it needs more flavor, needs more creativity...

Burger Tasting at Folsom Bistro

As noted above, DarthLefty, Mylo, and my son and I went to Folsom Bistro today to work on our first hamburger taste testing venture.

This was the first time I've been to Folsom Bistro, it's a nice place. Darth Lefty posted a good accurate description of the place as follows; "As for ambience, this place is kind of schizo. The menu was very good for a lunch menu, there's a few more things I'd like to go back try and try sometime ...like their risotto and duck confit.

The service was pretty good, the gal working there was very attentive and kept our drinks filled often and she brought out our food hot - I can't ask for much more then that.

We all ordered the Kobe Beef Burger Lunch deal that comes with fries and a drink.
The Kobe Burger itself comes with onion confit, tomato, butter lettuce and steak sauce.

Mylo and I ordered our burgers medium rare and DarthLefty and my son ordered theirs medium. I have to say this is one of the first places that really got the orders cooked perfectly as we ordered - it's all too common that burgers get over cooked and that really ruins the taste, but I give thumbs up to Folsom Bistro for cooking it spot on exactly as I requested. The burger was nice and cooked and charred a bit on the outside and pink and juicy on the inside - just the way I like it.

These burgers were still bleedin' they were so juicy. I think I also learned I like medium a bit better then medium rare (they weren't kidding about the rare part)

The quality of the ingredients seemed to be perfect; excellent lean kobe beef, fresh tomato and butter lettuce and the fries were good too - they aren't the kind I really like a lot but they were good.

The presentation of the burger was as expected...



The taste was very good, the beef, as noted previously, was very excellent, I had mine with the guyure cheese and with the cooked onion confit it tasted very good. It could have been a little more seasoned but sometimes I gotta step back and say to myself, that's not something you should really mess with on traditional hamburgers - the juices alone were the flavor to savor and that made for a very good tasting burger.




We're still working on a ratings scale so we can track the scores for each place and here's sorta what we're using for guidelines right now

1) quality of ingredients
2) presentation of plate
3) taste of ingredients
4) service
5) ambiance
6) value

If there's anything else we should use as benchmark's please feel free to make suggestions and come on down and join us sometime - our next tasting will be at the old Big Dip on Natoma next Weds at noon
