Interesting. My info came from someone who said it was the owners wife that relayed this information. Weird how there could be such a disconnect in the stories. I guess we'll see one day if they do indeed open which a lot of people are hoping for!

It's been a long journey for them, with lots of challenges. I hope and expect they will find great success on Sutter.

You weren't wrong.

According to their Facebook page, Rosario said her husband Paul did have a cancer scare earlier last year that kept him away from the construction. He is in full remission now and things are looking good.

What's really cool is they commissioned an artist from San Francisco who is painting a great cityscape mural of all their favorite places. Love seeing good art and it's great that this piece is going up within our beloved Historic Sutter Street.  (this reminds me of that historic California scenery mural that is in Poor Red's that is being rebuilt right now and set to open later this year too)

Can't wait for this place to open!

Here's what one of the owners, Rosario, posted today: "

"Greetings! We hope that 2016 has been a blessing to you thus far.

Yes, it’s been a long time since our last post. We are appreciative of all the texts, emails and messages inquiring on the business’ update.

About a year ago, we were progressing with some vent/hood issues that had become a major obstacle for the complete install of the kitchen. I have no regrets in taking an empty shell and building out what has become my dream kitchen. We love the location and the Historic Folsom community. I once read that Steve Jobs had an employee that lost his company about $600K. He was asked if he was going to fire this employee. His response was, “No, it just cost me $600K to train him”. Our investment isn’t that large, but that’s how I see the financial impact of the delays…it can only make us better small business owners and more financially astute.

On New Year’s Eve, 2014, Paul (my husband) started chemo treatment for Stage IV colon cancer….not what we expected in the midst of diligently working hard to get our new business open. There were still several months of technical and mechanical issues to get the vent/hood install resolved. As a Civil Engineer, having him step aside from the construction made things much more challenging. It was one of the moments in life where you have to step back and say “OK…not going to stress!’.

At this time, we can only look forward and savor the experiences that make us wiser. We are still very passionate about this endeavor and are anxiously waiting to make some delicious tacos and burritos. Our menu is simple and cost-effective to our patrons, and most important, the taste is superb! Meats include Beef (Carne Asada), Pork (Carnitas), Pork & Tomatillo (Chile Verde), Vertical Roasted Pork (Al Pastor), Grilled Chicken (Pollo Asada), Shrimp (Camornes)…..and my personal favorite, the vegetarian Nopales (Cactus).

Paul is in full remission and handled the 11 months of treatment like a superhero.

From our family to yours, we hope that 2016 has been a great start and we look forward to serving our community!

Paul and Rosario"

I'm very glad to hear they are still going to make this happen, and that Paul is pulling through.

This place really feels like it's going to be my favorite taqueria in the region, given how Rosario talks about the food, and that mural which clearly invokes the SF Mission District - where you can find the best burritos in the world.

Me too! I don't know them well, but they seem like great people.

I grew up in the Mission, and I remember as a kid, El Faro was the favorite of only a few burrito joints in town.

I was at El Toro in the Mission a couple of weeks ago.

Here in Folsom, I like La Fiesta.

I think that Sutter St will be a huge success.
