I agree with many of your ratings (especially Jennies -- it's nice to see someone else who doesn't like them). But I haven't been too thrilled with Fats. China House used to be my fave, but the last couple of times I went there, I didn't like it much, and haven't been back since. I liked Emperor's Garden the few times I've tried it; obviously you didn't. And I love TJ's!
I notice you don't have Sunny Garden on your list. You probably wouldn't like it. It isn't strictly Chinese; they say "Asian Cuisine". I've liked most of the food we've gotten from there, but not everything.

PF Chang is my favorite. 1-5 and 5 is the best, PF Chang: 4
All the Chinese Restaurants can improve the quality of their food by either eliminating or reducing:
MSG
Oil
Sauce
Corn starch
Canned vegetables
Deep fried or fried
Also an 8 hours of “customer service” course is needed before issuing a business license for all ehtnic restaurants.

I have to disagree with you about Hop Sings.... I'd give them 3, 3, 4
I like the funky decor in there - its just how a good ol' Chinese family restaurant should look. I also thought the service there was pretty good and the food quality up there too.

For comparison, a little hole in the wall place in China Town (SF) that we never miss gets 3, 3, 4. You know it's authentic when there are fish in a tank, ducks hanging in the front window, the cooks are all right out front, and the menus are in Chinese and written on the walls. Ratio of Chinese diners to others is typically about 9:1.

I don't find it greasy like some others. I guess it depends on what you order.
I like the fact that their chicken with something includes plenty of chicken, or shrimp, or beef, etc. Their won ton soups are good are good, and when I've had asparagus with something it's not mushy and old, or from a can.

It tastes better if the Chinese Restaurants eliminating/reducing the MSG, Oils, Deep Fried/Fried Food, Canned Vegetables...

One of my favorite Chinese Restaurants is in China Town, Los Angeles.
I love their House Special Shrimp: $11.95, and their Sauté Shrimp: $11.95
If I had to choose between “Sex” and these two Shrimp Dishes”,
I would take the two Shrimp Dishes without a doubt.
