Went to the soft opening tonight for Skipolinis Pizza. I must stand corrected, they did figure out how to convert a Tahoe Cabin to an Italian restaurant. We were talking to the GM and they had a ton of work to do including completely replacing the inside fireplace and bar. It looks very nice and has a nice atmosphere to it. They also expanded the outside area (which was always jammed during nice weather at Joes) and added a fireplace along with a kids playground.

Food wise it was pretty good. They did a buffet for the pizza, salad, pasta so you figure the quality should only be better. The Pizza was very go good with a tasty crust. Salad was ok (buffet quality) and pasta was good. They had trays of apps being served, and everything we had was good. The standout are the bacon Jalapeno poppers (for those that experienced the Dancing Bear in Plymouth before it closed, these are close).
They will have a very good happy hour M-F 2-6pm with apps about $3 off, and a good selection of drinks. Now we just have to wait for a warming trend!

I'd like to try them soon. I enjoy pizza and I'm still searching for a slice that I like around here.

Ditto on the crust as tasty and the sauce was good also. Pasta was better than expected for a pizza place. Desserts were very , very good.

Bacon wrapped jalapeno -- just slighty too hot but I think that was due to seeds and membrane. If they scape them a little they'll be just right. They're definitely homemade.

What pasta did they have? I checked all of the other locations menus online and none of them listed any pastas. Unfortunately, they don't list a menu for the folsom location yet.

When are they fully opening?

They opened Monday.

As for Pastas, they have a large selections. The bartender told us that she really liked the Lasagne, the veggie pasta, and this spicy sausage pasta as her picks. I am more a pizza guy, so that is where I focused my stomach.

Someone mentioned desserts, ditto on that. They also make their own Gelato, will have to ask my Italian friend tell me if it is authentic (he says the place in mid town is the only really authentic Gelato place today), but for a dumb American I thought it was very good.

I have visited Skipolinis twice now and have enjoyed both visits. So far I have tried the Lasagna which is very good, 2 types of Pizza which is pretty good, and yesterday I tried the Spaghetti with Bolognese which was also pretty good. The bardenders that I have met are very friendly and outgoing etc: the interior and outside areas have been done in a very nice and inviting way, well worth the monies invested in this project. The owner/ G.M. is a very personable guy and it's easy to see why this small chain is doing well. They offer 10 different types of Pasta, from Ravioli, Fettucini with Chicken, the aformentioned Lasagna, Mac&Cheese. All in all it's a pretty substantial Menu, with Soupds, Salads, Panini Sandwiches and a large number of Appetizers.. You should definitly check them out.. Oh as mentioned earlier in the above thread, and really decent Happy Hour wirh drink discounts as well as $5.00 Appetizers.

4thgenFolsomite, very comfortable, wood floors are much more quite than the old Tahoe Joe's floor that was very noisy when people dragged their chairs across the floors... it is very nice inside... give them a visit..

A few of us had lunch there yesterday, my 4th visit this week. Thus far we have sampled their Pizzas several kinds and they were all pretty, however my Bride ordered one and asked them to keep it in the oven longer than average to crispen up the bottom and edges as well as melting the cheese and toppings at it was very good !! you might try this method as well. I being the pasta kind-of guy have eaten the Cajun pasta, very good! Chicken and artichoke hearts on a creamy pesto sauce... another good one!! the Lasagne also very good. For the sandwich folks the meatball and all meat were big hits with with our resident sandwich guy. The bacon wrapped Jalapeno was like by some who like that stuff, too hot for my tastes. If you haven't tried them yet, um well you should hehe. Have a Merry Christmas and fortunate new year...

Went back for Happy Hour. 22oz Coors Lights for $3! We had the Jalapeno's again, still hot, still good. We also tried the fried green beans, which were also good and somehow seem like a healthy choice (yeah right). They have made me forget about missing Tahoe Joe's happy hour.

Hey, this all sounds great. My wife and I will make a trip there after Christmas.

We tried it tonight. The food was good, but more expensive that I expected. The kid's meal isn't a meal, it's a kid's plate of pasta. The outside area is amazing. Can't wait to site outside next to the fireplace.

How can you NOT like a place where the Happy Hour starts at 2 p.m. ?? It should do well, although some people may say the pizzas are pricey. And they have cheesecake, so what's not to like??
